PEARS
In the Pacific Northwest, warm days cling, while nights are noticeably cooler. The tension between daytime warmth and nighttime cold is bringing out the best in the Red Starkrimson, Red Sensation, Tosca, and Bartlett Pears, each of which has an extraordinary flavor early in the season. Bartlett Pears and their red-hued relative, Red Sensation, have grainier flesh and a subtle floral aroma. The deeply crimson Red Starkrimson are crisp, with notes of vanilla, while Tosca are perfumed with notes of rose and butterscotch that hit the nose when the fruit is cut. We’ll soon see several other standout varieties arrive in the coming days, including Beurre D’Anjou, Red Anjou, and Taylor Gold Pears.

JOY'S MIDNIGHT CHARD
Vivid and structured, Joy’s Midnight Chard is a standout in the transition between Summer and Fall. More tender than standard chard varieties, these striking leaves are supple enough to eat raw while still holding their texture beautifully when cooked. Selected from Red Beets and Spinach, Joy’s Midnight Chard takes on a mild earthiness, with little to no bitterness and a vegetal finish.
